Leket Israel has received an extraordinary donation of carrots and beets from packing houses in the Gilboa region of Northern Israel and Kibbutz Alumim in Southern Israel. These vegetables are just as nutritious and delicious as those sold in supermarkets. They were simply rejected because they did not meet the cosmetic standards for size or appearance. Now we're racing against time. Without immediate action, this fresh produce could spoil in the Israeli summer heat and be discarded before it reaches the thousands of families who need it most. How do we rescue 1,000 tons of fresh produce? • Vacuum-pack fresh beets - Cook and vacuum-seal a portion of the beets, extending their shelf life and making them easy to store and enjoy. • Prepare soups and salads - Using advanced sterilization technology, transform rescued vegetables into ready-to-eat soups and salads that do not require refrigeration. Our goal: To provide food to 22,000 families in need throughout Israel. Donation of $180 helps provide rescued produce to 36 families in need Join the largest food rescue operation of the summer.
